Drappier ‘Trop m’en Faut’ Coteaux Champenois has been created by Hugo Drappier and the name comes from the old French way of saying, “I can’t get enough”. This wine is produced from 100% Pinot Gris, also known locally as Fromenteau. These grapes are a part of the estate’s ‘forgotten garden’ of varieties and are grown alongside Petit Meslier, Arbane and Blanc Vrai.
The 2021 edition takes 50% of its grapes from the 2017 harvest and the other half from 2018. The wine is bottled after natural malolactic fermentation with no clarification or filtering.
