Trop m’en faut! is a fascinating new cuvée from the pioneering family-owned champagne house of Drappier, made entirely from Pinot Gris. The name of this champagne is a play on words, alluding to the old name for Pinot Gris: Fromenteau. It is extremely rare to find a champagne that features this grape variety, but Drappier are specialists in championing forgotten varieties of the region. It comes from a single site, with half of the crop going into a still wine, and the other half making this distinctive, zero dosage, organic, low sulphur champagne. It is made up of 50% from the 2017 harvest, and 50% from 2018, with a portion matured in barrel, before ageing for 24 months on lees sur latte.
